Lunch or Dinner?

I am sharing here all the other recipes that I have been creating during quarantine, that I think could be incorporated so easily into your daily routine... Enjoy these simple, healthy and tasty dishes.

Ratatouille (TN: Shakshuka)

This is such an easy recipe. Tomatoes are a must, red peppers and onions too! Let them all blend in together and nicely break an egg or two on top to give it some protein. Cook some brown rice on the side to have carbs and there you go: a quick, healthy, complete dish to have for dinner or lunch... Bon appétit.




Tacos Tuesday? (or any other day)


Chicken, chili beans, rice, peppers.... yum!


















Chicken, Mushroom and Pepper Pizza

You can even make the tomato paste yourself! Boil 4 fresh tomatoes, peel off the skin and stir with onion, garlic, oregano, salt, pepper... for 3 hours! 








Red Bean Sauce


You need tomato paste, chicken, onion and beans. So easy and delicious! Serve with rice or bread.









Lasagna (with cottage cheese, no béchamel!)

My proudest creation so far. This was made with love, ground beef, tomato sauce/paste, and a LOT of cheese. Super easy recipe: in a big pot, cook one onion and garlic, 1 pound of ground beef, add oregano salt and pepper, tomato sauce and paste. Once that's ready, cook your pasta layers and prepare a bowl with cottage cheese, one egg, persil and parmesan (salt/pepper too). Now that you have all the elements, it's time to set your layers.

  • Ground Beef sauce

  • Pasta

  • Cottage Cheese/Mozza cheese

Repeat this until your last layer is ground beef sauce and some parmesan cheese on top. Put in the oven for 45-50 minutes, 475F. Let it rest 15-20 minutes before eating.

DELICIOUS.


Spinach, Chicken and Cheese Pie

Everyone will love this light and tasty pie. No I did not make the crust myself, I bought a pre-made pie crust. I made the filling though:4 eggs, spinach, onion, lots of cheese, chicken and more cheese. 













Chicken Skewers

Chicken, Aubergine and Peppers: cook in oven for 40-45 minutes.
