"C" For Cakes

I have always wanted to make beautiful cakes like the ones you see on cooking TV shows. I used to watch Zumbo's Just Desserts, Nailed It, Sugar Rush Netflix for fun, and to have a good laugh... But they ended up being a source of inspiration for baking. In this page I am sharing some recipes I came up with based on my preferences, as well as from my grandpa's very easy to make cake recipes that I have been iterating. My grandma has also taught me how to make her famous and delicious orange cake that I'll be sharing here too!
My Favorite: Coconut & Matcha Cake

Make sure you find the right Matcha powder and do not add any baking powder / soda as it will take away the natural taste of your Matcha. Mix 2 eggs, 1 cup of sugar, 1/2 cup of coconut oil, 1tbs Matcha powder, 1.5cup of flour and bake for 45 minutes, 350F.
Matcha, Almond and Honey

There's a small difference here: I added shredded almonds, shredded coconuts, honey and instead of white flour, I used brown which made the cake lighter and still very tasty!
Protein Cups

Guess what this is made of? Chickpeas and chocolate protein powder. SO tasty! Blend 1 cup of chickpeas with 5 dates, coconut flakes, 1tsp vanilla extract, 1 cup oats and then add some melted dark chocolate OR chocolate protein powder (hot water bath with some water until thick). Leave in the fridge for 3-4 hours and enjoy!
Orange Glaze

My grandma's favourite orange cake. All you need is: 3 eggs, 2 glasses of flour, 1 glass of sugar, orange zest (x2), orange juice (x2), vanilla baking powder (1 pack), and that's it! Mix it all, put it in the oven for 45 minutes and then add some icing.
French Yogurt Cake

I chose Vanilla yogurt for this one, but you can also use plain yogurt or Greek yogurt. It's so easy to make! Keep that yogurt pot to measure your ingredients (sugar x2, flour x3, oil x1) and 1tsp of salt and baking powder. Ta-Da! that's it. Enjoy the simplicity of this cake...
Coffee Cake

So I came up with this recipe, it's actually pretty similar to the Yogurt Cake, only difference is I added some coffee frosting which is basically Dalgona Coffee. Super easy to make! Once you make the yogurt cake, cut it in half and spread some coffee frosting in the middle and on top! Super tasty for breakfast.
Banana, Blueberries and Oats (BB&O)
This is a recipe I came up with myself. It is so easy to make, and was inspired by my love for oats and bananas. For this one, you need Greek yogurt, oats, almonds, bananas (x2), blueberries, and of course honey, flour, coconut oil and baking powder too. What I love most about this cake is how healthy it is. No added sugar all these ingredients natural flavours get together in a nice and beautiful way.
Lemon and Yogurt
This lemon drizzle cake is so fresh for a summer taste! You need one lemon zest, greek yogurt, sugar, flour and eggs. You can also add some icing as an option which would make it more squishy and tasty. But if you want to avoid sugar then you'd better keep it simple with those few ingredients.
Carrot Cake
You can find plenty of recipes online for carrot cakes. You can make it with or without frosting. For frosting: mix some cream cheese (Philadelphia) with sugar (1cup) and add it on top once the cake cools down. The
Tunisian Cake with Orange Zest

This is a cake made with Red Violet (or "Droo") which is a famous Tunisian sorghum pudding. Adding to it some orange zest, almond and nuts, this is the perfect Tunisian traditional cake! Try it yourself with 3 eggs, 1 glass of oil, 1 glass of four, 1 glass of Droo, 1 glass of sugar, some almonds, 1 orange zest, baking powder, and seeds of your choice. It is so tasty!
Coconut Flan

This was definitely out of my comfort zone! I have never made flan before, and I wanted to try it out. I also LOVE coconut so I decided to make a coconut flan. Here's how it looks like and here's the recipe (so so easy: 4 eggs, condensed milk can, coconut milk can, shredded coconuts (80g) - mix it all and pour it in a pan loaf after adding 100g of melted sugar! - it needs to bake at 350F for 45mins).
Bonus: Granola Bar
You can either use peanut or almond butter (any nut butter will do to be honest).
Mix your nut butter with some warm honey and some oats, almonds, granola, and chia seeds. Let it rest in the freezer for 2-3 hours and enjoy amazing home made granola bars!

Tres Leches ("Milk Cake")

I made this one for a friend who recommended we try it out. Very easy recipe, super sweet cake! It's worth a try.
You have three elements: the cake (5 eggs, 1/2 cup of butter, 1tsp vanilla extract, 1tsp baking powder, 1cup sugar, 1 and 1/2 cup flour), tres leches (evaporated, condensed and regular milk mixed) and whipped cream on top! As you can see, the ingredients make it quite heavy but still... super tasty!
